Yorkshire Nduja, Lishman’s of Ilkley - 150g. GREAT TASTE AWARDS 2 GOLD STARS 2017
Handmade from Yorkshire pigs. Nduja is a soft spreadable salami (originally from Calabria in Southern Italy) which is seasoned with chilli and paprika making it fiery hot. Best dotted on pizzas, mixed with tomato and grilled on bread, added to pasta dishes or stews.

Rebel Pancetta, Rebel Cures - 100g. FROM THE ARTISAN CURING TEAM DOWN IN BRIGHTON
This pancetta has been cured in a blend of herbs and spices and smoked slowly over hickory wood. Thinly sliced and packed full of flavour!
Cured Cheek (Guanciale) - Salt Pig Curing Co - 100g. AWARD WINNING CHARCUTERIE FROM RARE BREED MATURE PIGS IN THE COTSWOLDS
Guanciale is the cheek of the pig which has been cured, fermented and air-dried in a similar way to pancetta. Guanciale has more fat than pancetta, but as a result has a huge depth of flavour. The fat is transformed by the curing and fermenting process and becomes silky and unctuous. It is the authentic ingredient used in Italy to make the classic dishes; pasta al'amatriciana and spaghetti alla carbonara.
Chorizo, Tempus Charcuterie - 175g
This chorizo is the latest launch from Tempus Charcuterie and one we are utterly delighted with. This classic is knockout in our opinion and is produced with a trademark contemporary Tempus twist.
Tempus No.8 - 100g. GREAT TASTE AWARD STARS 2021, 2022
So what is No.8? Well, it isn’t Nduja or Sobrasada; it’s No.8, a soft, fully aged, ready-to-eat product that is as at home on a piece of sourdough as it is rendering down in a pan with diced shallots and garlic. After fermenting and ageing, fresh layers of spicing are added to deliver something uniquely British and uniquely Tempus. Dried orange peel, fennel, two types of Mexican chilli, cayenne, and mace are expertly balanced to compliment the lactic tang of the slow ferment and the rich garlicky pork.
